  • 1 cup low-sodium chicken or vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional

Instructions

  1. In a skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Drain excess fat.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Transfer the beef mixture to a crockpot and add the pumpkin puree, diced tomatoes, tomato sauce, black beans, kidney beans, and broth.
  4. Stir in the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using).
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Serve hot, topped with shredded cheddar cheese, sour cream or Greek yogurt, chopped cilantro, diced avocado, and sliced jalapeños as desired.
