Ingredients

  • 100% wild rice
  • vegetable stock or chicken stock
  • sweet potato
  • carrots
  • celery
  • onion
  • mushrooms
  • garlic
  • Old Bay seasoning
  • bay leaf
  • coconut milk or cream sauce
  • kale
  • salt
  • pepper

Instructions

  1. Rinse the wild rice under cold water and set aside.
  2. In a large pot, heat a tablespoon of oil over medium heat and sauté the onion, garlic, carrots, and celery until softened.
  3. Add the sweet potato, mushrooms, and wild rice, stirring to combine.
  4. Pour in the vegetable or chicken stock, then add the Old Bay seasoning and bay leaf. Bring to a simmer.
  5. Cook until the rice is tender, about 30 minutes, stirring occasionally.
  6. Stir in coconut milk and kale, cooking until the greens are wilted. Season with salt and pepper to taste.
