Ingredients
- 100% wild rice
- vegetable stock or chicken stock
- sweet potato
- carrots
- celery
- onion
- mushrooms
- garlic
- Old Bay seasoning
- bay leaf
- coconut milk or cream sauce
- kale
- salt
- pepper
Instructions
- Rinse the wild rice under cold water and set aside.
- In a large pot, heat a tablespoon of oil over medium heat and sauté the onion, garlic, carrots, and celery until softened.
- Add the sweet potato, mushrooms, and wild rice, stirring to combine.
- Pour in the vegetable or chicken stock, then add the Old Bay seasoning and bay leaf. Bring to a simmer.
- Cook until the rice is tender, about 30 minutes, stirring occasionally.
- Stir in coconut milk and kale, cooking until the greens are wilted. Season with salt and pepper to taste.
