- 1 cup cottage cheese (full-fat or low-fat)
- 2 large eggs
- 1/2 cup unsweetened cocoa powder
- 1/2 cup pure honey (or maple syrup

- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Optional Mix-ins: 1/4 cup chocolate chips or chopped walnuts
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a blender or food processor, combine the cottage cheese, eggs, cocoa powder, honey, vanilla extract, baking powder, and salt. Blend until smooth.
- If using, fold in chocolate chips or walnuts to the batter.
- Pour the brownie batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted comes out mostly clean.
- Let cool in the pan before cutting into squares and serving.
