  • 1 cup (120 g.) all-purpose flour
  • 1 Tbsp. pumpkin pie spice
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground ginger
  • 1 large egg
  • 1 (8-oz.) pkg. cream cheese
  • softened
  • 1/4 cup (50 g.) granulated sugar
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. kosher salt
  • 1/4 cup coarsely chopped raw pepitas
  • Demerara sugar
  • for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the egg, pumpkin puree, sour cream, brown sugar, granulated sugar, oil, and vanilla extract until smooth.
  3. In another bowl, mix the flour, pumpkin pie spice, baking powder, baking soda, nutmeg, kosher salt, and ginger.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a separate bowl, beat together the cream cheese, egg, granulated sugar, vanilla extract, and kosher salt until smooth.
  6. Fill each muffin liner halfway with the pumpkin batter, then add a spoonful of cream cheese filling, and top with more pumpkin batter until the cups are three-quarters full.
  7. Sprinkle the tops with coarsely chopped pepitas and a pinch of Demerara sugar.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool slightly before transferring to a wire rack to cool completely.
