- 1/4 cup coarsely chopped raw pepitas
- Demerara sugar

Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the egg, pumpkin puree, sour cream, brown sugar, granulated sugar, oil, and vanilla extract until smooth.
- In another bowl, mix the flour, pumpkin pie spice, baking powder, baking soda, nutmeg, kosher salt, and ginger.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a separate bowl, beat together the cream cheese, egg, granulated sugar, vanilla extract, and kosher salt until smooth.
- Fill each muffin liner halfway with the pumpkin batter, then add a spoonful of cream cheese filling, and top with more pumpkin batter until the cups are three-quarters full.
- Sprinkle the tops with coarsely chopped pepitas and a pinch of Demerara sugar.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before transferring to a wire rack to cool completely.
