Description
This Colorado Green Chili, or Chili Verde, is a flavorful and hearty dish featuring roasted green chilies, tender pork, and a blend of spices that will warm you up.
Ingredients
- Roasted and chopped green chilies
- Pork roast
- Olive oil
- Salt
- Pepper
- Minced garlic
- Diced onions
- Broth (chicken or vegetable)
- Tomatillo salsa (salsa verde)
- Ground cumin
- Mexican oregano
- Ground cloves
- Peeled and cubed potatoes
- Lime juice
- Masa (Mexican corn flour)
Instructions
- In a large pot, heat olive oil over medium heat. Season the pork roast with salt and pepper, then brown it on all sides in the pot.
- Remove the pork and set aside. In the same pot, add the diced onions and minced garlic, sautéing until the onions are translucent.
- Add the roasted green chilies, tomatillo salsa, ground cumin, Mexican oregano, and ground cloves. Stir well to combine.
- Return the browned pork to the pot and pour in the broth. Bring to a simmer, cover, and cook for about 30 minutes until the pork is tender.
- Add the cubed potatoes and lime juice, and simmer for an additional 15 minutes, or until the potatoes are cooked through.
- To thicken, mix masa with a little water to create a slurry and stir it into the chili. Simmer for a few more minutes until thickened.
Notes
Feel free to adjust the spice levels by choosing milder or hotter green chilies. This dish is best served with warm tortillas or rice.
