- 2 tablespoons butter

- 2 teaspoons baking powder
- 2 tablespoons powdered sugar
- 2 tablespoons instant espresso powder
- 1/2 teaspoon salt
- 2 cups buttermilk
- 2 large eggs
- 1/2 cup mini chocolate chips
- 2 cups powdered sugar
- 2 tablespoons of buttermilk as needed
- 1 tablespoon instant espresso powder
Instructions
- In a large bowl, melt 1 tablespoon of butter and set aside.
- In another bowl, whisk together the flour, baking powder, powdered sugar, instant espresso powder, and salt.
- In the bowl with melted butter, mix in the buttermilk and eggs until well combined.
- Gradually add the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix.
- Fold in the mini chocolate chips.
- Heat a griddle or skillet over medium heat and grease it with the remaining tablespoon of butter.
- Pour 1/4 cup of batter for each pancake onto the skillet and cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook until golden brown, about another 2-3 minutes.
- Serve warm with a drizzle of powdered sugar mixture made from powdered sugar, instant espresso powder, and buttermilk as needed.
Notes
Make sure not to overmix the batter for the fluffiest pancakes. You can adjust the thickness of the powdered sugar drizzle by varying the amount of buttermilk added.
