- 2 teaspoons baking powder
- 2 tablespoons powdered sugar
- 2 tablespoons instant espresso powder
- 1/2 teaspoon salt
- 2 cups buttermilk
- 2 large eggs
- 1/2 cup mini chocolate chips
- 2 cups powdered sugar
- 2 tablespoons of buttermilk

- 1 tablespoon instant espresso powder
Instructions
- In a large bowl, melt 1 tablespoon of butter and mix in flour, baking powder, powdered sugar, espresso powder, and salt.
- In another bowl, whisk together buttermilk, eggs, and the remaining melted butter.
- Combine the wet ingredients with the dry ingredients until just combined; fold in the mini chocolate chips.
- Preheat a griddle or non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake, cooking until bubbles form on the surface, then flip and cook until golden brown.
- For the espresso glaze, mix powdered sugar, 2 tablespoons of buttermilk, and instant espresso powder until smooth. Drizzle over pancakes before serving.
Notes
These pancakes are best served warm with the espresso glaze drizzled on top. Adjust the thickness of the glaze by adding more buttermilk if necessary.
