This Coconut Cloud Cake is a delightful combination of rich coconut flavor and creamy frosting, making it the perfect dessert for any occasion.
Ingredients
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter

2 cups granulated sugar
4 large eggs

1 teaspoon coconut extract
1 cup coconut milk
1 1/2 cups heavy whipping cream
8 oz cream cheese

1/2 cup powdered sugar

1 teaspoon coconut extract
1 cup sweetened shredded coconut

Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a bowl, combine the flour, baking powder, and salt; set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition; then mix in the vanilla and coconut extracts.
- Gradually add the dry ingredients to the creamed mixture, alternating with coconut milk, starting and ending with the dry ingredients.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- For the frosting, in a mixing bowl, whip the heavy cream until soft peaks form. In another bowl, beat the softened cream cheese with powdered sugar, vanilla extract, and coconut extract until smooth.
- Fold the whipped cream into the cream cheese mixture until combined.
- Once the cakes are cool, spread frosting between the layers and on top and sides of the cake.
- Finally, sprinkle the toasted or fresh shredded coconut on top of the frosted cake.
