Description
Classic Stuffed Peppers are a flavorful and hearty dish filled with a savory mixture of ground beef, rice, and spices, all baked to perfection inside tender bell peppers.

- 4–6 bell peppers use any color – green

- 1 tablespoon olive oil
- 1 lb ground beef 450g – you can also use ground turkey

- 1 medium onion chopped
- 1 jalapeno pepper chopped (optional
- for spicy)
- 5 cloves garlic chopped
- 14.5 ounces fire roasted tomatoes (canned – or use diced tomatoes or tomato sauce)
- 1 cup shredded cheese cheddar
- mozzarella
- or a blend – I LOVE pepperjack for myself
- 1 tablespoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup cooked rice white
- brown
- or wild rice
- For Garnish. Fresh chopped parsley
- red pepper flakes
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat, then add the chopped onion and cook until translucent.
- Add the ground beef (or other protein) to the skillet, breaking it apart and cooking until browned.
- Stir in the garlic, jalapeno (if using), fire roasted tomatoes, rice, paprika, oregano, basil, salt, and pepper, mixing well.
- Remove from heat, and stir in the shredded cheese, reserving some for topping.
- Stuff the mixture into each bell pepper and place them upright in a baking dish.
- Top with remaining cheese and cover with foil.
- Bake in the preheated oven for 30 minutes, removing the foil for the last 10 minutes to brown the cheese.
- Garnish with fresh parsley and red pepper flakes before serving.
Notes
For added flavor, try mixing different types of cheese or adding more spices according to your preference.
