Description

Classic Stuffed Peppers are a flavorful and hearty dish filled with a savory mixture of ground beef, rice, and spices, all baked to perfection inside tender bell peppers.


Ingredients

  • 46 bell peppers use any color – green
  • yellow

  • 1 tablespoon olive oil
  • 1 lb ground beef 450g – you can also use ground turkey
  • chicken
  • pork
  • sausage
  • tofu
  • or other similar
  • 1 medium onion chopped
  • 1 jalapeno pepper chopped (optional
  • for spicy)
  • 5 cloves garlic chopped
  • 14.5 ounces fire roasted tomatoes (canned – or use diced tomatoes or tomato sauce)
  • 1 cup shredded cheese cheddar
  • mozzarella
  • or a blend – I LOVE pepperjack for myself
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup cooked rice white
  • brown
  • or wild rice
  • For Garnish. Fresh chopped parsley
  • red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat the olive oil over medium heat, then add the chopped onion and cook until translucent.
  4. Add the ground beef (or other protein) to the skillet, breaking it apart and cooking until browned.
  5. Stir in the garlic, jalapeno (if using), fire roasted tomatoes, rice, paprika, oregano, basil, salt, and pepper, mixing well.
  6. Remove from heat, and stir in the shredded cheese, reserving some for topping.
  7. Stuff the mixture into each bell pepper and place them upright in a baking dish.
  8. Top with remaining cheese and cover with foil.
  9. Bake in the preheated oven for 30 minutes, removing the foil for the last 10 minutes to brown the cheese.
  10. Garnish with fresh parsley and red pepper flakes before serving.

Notes

For added flavor, try mixing different types of cheese or adding more spices according to your preference.
