  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple peeled
  • cored
  • and chopped into small pieces
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the vanilla extract and eggs to the butter mixture, mixing well.
  5. Gradually add the dry ingredients to the wet mixture alternately with milk, mixing just until combined.
  6. In a separate bowl, toss the chopped apple with brown sugar and cinnamon, then fold into the batter.
  7. Pour the batter into the prepared loaf pan, smoothing the top.
  8. For the topping, mix together brown sugar and cinnamon, and sprinkle it over the batter.
  9. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the bread cool before glazing.
  11. To make the glaze, whisk together confectioners’ sugar, cinnamon, and water until smooth, then drizzle over the bread before serving.

Notes

For best results, use a tart apple for added flavor. You can also add nuts or raisins for extra texture.
