- 1 pint Open Nature Ice Cream
- 4 small tortillas street taco sized
- 2 tbsp butter melted
- 4 tbsp sugar
- 1 tsp cinnamon
- 5 ounces semi sweet chocolate chips
- 1 tbsp coconut oil
- 2 tbsp Sprinkles for topping
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix together the sugar and cinnamon.
- Brush both sides of each tortilla with melted butter.
- Dredge or sprinkle each tortilla with the cinnamon-sugar mixture until well coated.
- Place the tortillas on a baking sheet and bake for 8-10 minutes until they are crisp and golden.
- While the tortillas are baking, melt the chocolate chips and coconut oil together in a microwave-safe bowl, stirring until smooth.
- Once the tortillas are done baking, allow them to cool slightly, then shape them into taco shells.
- Scoop the ice cream into the taco shells and drizzle with melted chocolate.
- Top with sprinkles and serve immediately.
Notes
For best results, serve the tacos right after assembling to enjoy the contrast of warm tortillas and cold ice cream.
