- 1 1/4 cups Flour
- 1/3 cup Cocoa Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 6 tbsp Butter
- Melted
- 3/4 cup Brown Sugar
- 1 Egg
- 1 tsp Vanilla
- 1 cup Grated Zucchini
- 1 cup Chocolate Chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, mix the melted butter and brown sugar until well combined.
- Add the egg and vanilla to the butter mixture, mixing well.
- Stir in the grated zucchini, then gradually add the dry ingredients to the wet mixture until combined.
- Fold in the chocolate chips.
- Drop tablespoons of dough onto the prepared baking sheet, spacing them a couple of inches apart.
- Bake for 12-15 minutes or until the edges are firm but the centers are still soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
You can use either freshly grated zucchini or pre-packaged zucchini. These cookies are best enjoyed slightly warm.
