  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup mini chocolate chips (optional)
  • 1 1/2 cup sugar or xylitol for sugar free
  • 1 cup shredded zucchini (160g)
  • 1/2 cup oil or almond butter
  • 1 1/2 tbsp pure vanilla extract
  • 1 cup water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, mix together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together the sugar, shredded zucchini, oil (or almond butter), vanilla extract, and water.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If desired, fold in mini chocolate chips.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
