  • 8 oz (225g) dark chocolate
  • chopped
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (60ml) maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup (95g) all‑purpose flour
  • 1/4 cup (25g) cocoa powder
  • 1/4 tsp salt
  • 1 cup (240ml) heavy cream
  • chilled
  • 4 oz (115g) dark chocolate
  • melted
  • 2 tbsp powdered sugar
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a square baking pan.
  2. In a saucepan, melt the butter and chopped dark chocolate together over low heat, stirring until smooth.
  3. Remove from heat, then whisk in the granulated sugar, maple syrup, eggs, and vanilla until well combined.
  4. Sift in the flour, cocoa powder, and salt, gently folding until just combined.
  5. Pour the brownie batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  6. Let the brownies cool completely in the pan.
  7. For the mousse, whip the chilled heavy cream until soft peaks form, then fold in the melted dark chocolate and powdered sugar until smooth and creamy.
  8. Spread the chocolate mousse evenly over the cooled brownie base, and chill in the refrigerator for at least 1 hour to set.
  9. Garnish with lemon zest if using, slice into squares, and serve cold.

Notes

For extra richness, use high-quality dark chocolate in both the brownies and mousse.
