- 1/2 cup (115g) unsalted butter
- 8 oz (225g) dark chocolate

- 3/4 cup (150g) granulated sugar
- 1/4 cup (60ml) maple syrup
- 2 large eggs
- 1 tsp vanilla extract
- 3/4 cup (95g) all‑purpose flour
- 1/4 cup (25g) cocoa powder
- 1/4 tsp salt
- 1 cup (240ml) heavy cream

- 4 oz (115g) dark chocolate

- 2 tbsp powdered sugar
- 1 tsp lemon zest (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a square baking pan.
- In a saucepan, melt the butter and chopped dark chocolate together over low heat, stirring until smooth.
- Remove from heat, then whisk in the granulated sugar, maple syrup, eggs, and vanilla until well combined.
- Sift in the flour, cocoa powder, and salt, gently folding until just combined.
- Pour the brownie batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Let the brownies cool completely in the pan.
- For the mousse, whip the chilled heavy cream until soft peaks form, then fold in the melted dark chocolate and powdered sugar until smooth and creamy.
- Spread the chocolate mousse evenly over the cooled brownie base, and chill in the refrigerator for at least 1 hour to set.
- Garnish with lemon zest if using, slice into squares, and serve cold.
Notes
For extra richness, use high-quality dark chocolate in both the brownies and mousse.
