- ½ cup canola oil

- 1 egg
- 1 teaspoon vanilla extract
- 2 large very ripe bananas

- ¾ mini semisweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the sugar, canola oil, milk, egg, and vanilla extract until well combined.
- Add the mashed bananas to the wet ingredients and mix until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the mini chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use very ripe bananas as they provide more sweetness and moisture.
