Ingredients
3 cups strawberries
washed and hulled
6–8 mint leaves
1 cup whole milk
2/3 cup plain Greek yogurt
either 2% or whole milk
1/4 cup orange juice
3 tbsp maple syrup
1/2 tsp ground cinnamon
1 tbsp vanilla extract
1/2 tsp kosher salt
1/4 tsp fresh ground black pepper
Instructions
- In a blender, combine the strawberries, mint leaves, whole milk, Greek yogurt, orange juice, maple syrup, ground cinnamon, vanilla extract, kosher salt, and black pepper.
- Blend until smooth and well combined. Taste and adjust sweetness if needed.
- Chill the soup in the refrigerator for at least 30 minutes.
- Serve in bowls garnished with chopped strawberries, thinly sliced mint leaves, a sprinkle of black pepper, and a swirl of heavy cream or warmed yogurt if desired.
