Chilled Mango Gazpacho is a vibrant and refreshing summer soup that combines the sweetness of ripe mangoes with crunchy vegetables, perfect for hot days.
Ingredients
2 large ripe mangoes
peeled and diced
1 cup cucumber
chopped
1/2 cup red bell pepper
chopped
1/4 cup red onion
chopped
1 clove garlic
2 tablespoons lime juice
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup cold water (as needed)
1 small jalapeño
seeded (optional)
Fresh cilantro or mint for garnish (optional)
Instructions
- In a blender, combine the diced mangoes, cucumber, red bell pepper, red onion, garlic, lime juice, olive oil, salt, black pepper, and jalapeño if using.
- Blend until smooth. If the mixture is too thick, add cold water gradually until the desired consistency is reached.
- Taste and adjust seasoning if necessary. Chill in the refrigerator for at least 30 minutes before serving.
- Serve garnished with fresh cilantro or mint.
Notes
For an extra kick, keep the seeds of the jalapeño. This soup is great served with crispy tortilla chips.
