Chilled Cucumber Soup with Herbs is a refreshing summer bowl that combines the crispness of cucumbers with the creaminess of yogurt and the zest of fresh herbs, perfect for hot days.
Ingredients
3 large cucumbers peeled and chopped
1½ cups plain Greek yogurt
½ cup sour cream
1 clove garlic minced
2 tablespoons fresh dill finely chopped
2 tablespoons fresh lemon juice
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon black pepper
½ cup cold water or vegetable broth for thinning
Small diced cucumber cubes for garnish
Extra yogurt or sour cream drizzle for garnish
Fresh dill sprigs for garnish
Cracked black pepper for garnish
Thin cucumber ribbons for garnish
Instructions
- In a blender, combine the peeled and chopped cucumbers, Greek yogurt, sour cream, minced garlic, fresh dill, lemon juice, olive oil, salt, and black pepper.
- Blend until smooth and creamy. If the soup is too thick, thin it out with cold water or vegetable broth until desired consistency is reached.
- Chill the soup in the refrigerator for at least 30 minutes before serving.
- Serve chilled, garnished with small diced cucumber cubes, a drizzle of yogurt or sour cream, fresh dill sprigs, cracked black pepper, and thin cucumber ribbons if desired.
Notes
For an extra refreshing twist, consider adding a splash of hot sauce or a few drops of Worcestershire sauce.
