  • 1 teaspoon ground coriander
  • 1 (14 ounce) can diced tomatoes
  • ¼ cup water
  • 8 ounces tortilla chips
  • 2 cups shredded cheese
  • such as Cheddar or pepper Jack

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked, then drain any excess fat.
  2. Add the onions and bell pepper to the skillet, sautéing until softened (about 5 minutes).
  3. Stir in the garlic, chili powder, cumin, oregano, and coriander. Cook for another 2 minutes until the spices are fragrant.
  4. Pour in the diced tomatoes and water, then bring the mixture to a simmer. Cook for 10 minutes, stirring occasionally.
  5. Preheat the oven to 350°F (175°C).
  6. Layer the tortilla chips on a baking sheet, spoon the beef mixture over the chips, and sprinkle with shredded cheese.
  7. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
