- 1 lb boneless chicken thigh cut bite sized
- 1 teaspoon cornstarch
- 1/4 cup light soy sauce
- 1 teaspoon sesame oil
- 2 teaspoons sugar (or honey)
- 1 tablespoon rice apple vinegar (optional)
- 3 cloves garlic smashed
- 1 tablespoon cooking oil
- 1 medium zucchini cut in half lengthwise and then sliced
- 1 tablespoon oyster sauce
- Ground black pepper optional
Instructions
- In a bowl, combine the chicken thighs with cornstarch, soy sauce, sesame oil, sugar, and rice apple vinegar (if using). Marinate for at least 15 minutes.
- Heat cooking oil in a large skillet over medium-high heat. Add smashed garlic and stir-fry for about 30 seconds until fragrant.
- Add the marinated chicken to the skillet and stir-fry until cooked through, about 5-7 minutes.
- Add the sliced zucchini and oyster sauce to the skillet. Stir-fry for another 3-5 minutes until the zucchini is tender but still crisp.
- Season with ground black pepper if desired. Serve hot.
Notes
For more flavor, consider adding some crushed red pepper flakes or fresh ginger to the stir fry.
