Ingredients

  • 1 lb boneless chicken thigh cut bite sized
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • 3 cloves garlic smashed
  • 1 tablespoon cooking oil
  • 1 medium zucchini cut in half lengthwise and then sliced
  • 1 tablespoon oyster sauce
  • Ground black pepper optional

Instructions

  1. In a bowl, combine the chicken thighs with cornstarch, soy sauce, sesame oil, sugar, and rice apple vinegar (if using). Marinate for at least 15 minutes.
  2. Heat cooking oil in a large skillet over medium-high heat. Add smashed garlic and stir-fry for about 30 seconds until fragrant.
  3. Add the marinated chicken to the skillet and stir-fry until cooked through, about 5-7 minutes.
  4. Add the sliced zucchini and oyster sauce to the skillet. Stir-fry for another 3-5 minutes until the zucchini is tender but still crisp.
  5. Season with ground black pepper if desired. Serve hot.

Notes

For more flavor, consider adding some crushed red pepper flakes or fresh ginger to the stir fry.
