Description

This Chicken Zucchini Casserole is a delicious and healthy meal, packed with tender chicken, fresh vegetables, and rich flavors from pesto and cheese.


Ingredients

  • 34 boneless
  • skinless
  • chicken breasts (about 2 lbs)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1 medium zucchini
  • 1 medium yellow squash
  • 1/2 medium sweet yellow onion
  • 1/2 cup pesto
  • prepared
  • 4 oz parmesan cheese
  • 4 oz mozzarella

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, season the chicken breasts with salt, pepper, and garlic powder. Cook over medium heat until browned and cooked through, about 8-10 minutes per side.
  3. While the chicken cooks, slice the zucchini, yellow squash, and onion into thin rounds.
  4. In a baking dish, spread the prepared pesto evenly on the bottom.
  5. Layer the sliced vegetables over the pesto, then slice the cooked chicken and place it on top.
  6. Finally, sprinkle the parmesan and mozzarella cheeses evenly over the top.
  7. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is golden and bubbly.
  8. Remove from the oven, let it cool for a few minutes, then serve warm.

Notes

Feel free to substitute other vegetables or cheeses as per your preference. For a spicier kick, add some red pepper flakes.
