This Chicken Zucchini Casserole is a delicious and healthy meal, packed with tender chicken, fresh vegetables, and rich flavors from pesto and cheese.

- 3–4 boneless
- skinless
- chicken breasts (about 2 lbs)
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1 medium zucchini
- 1 medium yellow squash
- 1/2 medium sweet yellow onion
- 1/2 cup pesto
- prepared
- 4 oz parmesan cheese
- 4 oz mozzarella
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, season the chicken breasts with salt, pepper, and garlic powder. Cook over medium heat until browned and cooked through, about 8-10 minutes per side.
- While the chicken cooks, slice the zucchini, yellow squash, and onion into thin rounds.
- In a baking dish, spread the prepared pesto evenly on the bottom.
- Layer the sliced vegetables over the pesto, then slice the cooked chicken and place it on top.
- Finally, sprinkle the parmesan and mozzarella cheeses evenly over the top.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is golden and bubbly.
- Remove from the oven, let it cool for a few minutes, then serve warm.
Notes
Feel free to substitute other vegetables or cheeses as per your preference. For a spicier kick, add some red pepper flakes.
