4 boneless
skinless chicken breasts
1 tablespoon olive oil

8 oz egg noodles
4 tablespoons unsalted butter
2 tablespoons olive oil
1 teaspoon garlic
minced
½ teaspoon salt
Freshly ground black pepper

Fresh parsley or basil

Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry and season both sides with olive oil, salt, pepper, garlic powder, onion powder, and thyme.
- Heat a skillet over medium heat and sear the chicken for 4-5 minutes on each side until golden brown and cooked through.
- While the chicken cooks, bring a large pot of salted water to a boil and cook the egg noodles according to package instructions; drain.
- In the same pot, melt the butter and add olive oil. Stir in the minced garlic and cook for about 1 minute.
- Add the drained noodles to the pot, season with salt and pepper, and toss to coat.
- Serve the chicken over the buttered noodles and garnish with freshly chopped parsley or basil, if desired.
Notes
For a richer flavor, consider marinating the chicken for a few hours before cooking. Feel free to add vegetables to the noodles for extra nutrition.
