3 tablespoons soy sauce

1 1/2 teaspoons lemon zest

1 tablespoon fresh parsley leaves chopped

plus more for garnish

1 tablespoon fresh thyme leaves chopped

1 teaspoon salt

1/2 teaspoon pepper

2 teaspoons minced garlic


Instructions

  • In a medium bowl, whisk together the olive oil, brown sugar, soy sauce, lemon zest, parsley, thyme, salt, pepper, and minced garlic until well combined.
  • Place the chicken thighs in a resealable plastic bag or a shallow dish and pour the marinade over the chicken, ensuring all pieces are well coated.
  • Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 4 hours, to allow the flavors to meld.
  • Preheat your oven to 375°F (190°C) and place marinated chicken thighs on a baking sheet.
  • Bake for 30 minutes or until the chicken reaches an internal temperature of 165°F (74°C), basting occasionally with the marinade.
  • Garnish with additional chopped parsley before serving.
