Description

This Chicken Shepherd’s Pie is a comforting and hearty dish featuring tender chicken in a savory gravy topped with creamy mashed potatoes, perfect for any family meal.


Ingredients

  • 2 lbs. boneless skinless chicken breast or thighs

  • 3 cups chicken broth
  • 4 Tablespoons butter
  • ½ small yellow onion
  • finely diced
  • 3 cloves garlic
  • minced
  • ½ teaspoon EACH: Onion Powder
  • mustard powder
  • dried thyme
  • dried rosemary
  • ¼ teaspoon EACH: Ground sage
  • black pepper
  • 1/3 cup flour
  • ½ cup Half and half
  • 1 chicken bouillon cube
  • or 1 tsp better than bouillon
  • 1 teaspoon Worcestershire sauce
  • 2 cups frozen vegetables
  • (peas
  • carrots
  • corn)
  • 5 cups warm mashed potatoes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, season the chicken with salt and pepper, then add chicken broth and bring it to a boil. Cook until the chicken is cooked through, about 15 minutes.
  3. Remove the chicken, shred it, and set aside. In the same pot, melt butter over medium heat and sauté onion and garlic until fragrant.
  4. Add the herbs and spices, then stir in the flour to create a roux. Gradually whisk in the Half and half and the chicken broth until thickened.
  5. Add the shredded chicken, Worcestershire sauce, bouillon cube, and frozen vegetables to the sauce, mixing well to combine.
  6. Transfer the chicken mixture to a baking dish and spread the warm mashed potatoes on top, smoothing them out.
  7. Bake in the preheated oven for about 25 minutes or until the top is golden brown.
  8. Allow to cool slightly before serving. Enjoy your Chicken Shepherd’s Pie!

Notes
