Ingredients

  • skinless and cut into roughly 2 inch pieces
  • ¼ cup Soy Sauce
  • low sodium
  • ¼ cup Coconut Milk
  • unsweetened
  • 2 tablespoons Brown Sugar
  • 2 Garlic Cloves
  • grated or minced
  • ½ teaspoon Turmeric
  • ½ teaspoon Ginger Powder
  • ½ teaspoon Salt
  • ½ teaspoon Coriander
  • ¼ teaspoon Crushed Red Pepper

Instructions

  1. In a large bowl, combine soy sauce, coconut milk, brown sugar, garlic, turmeric, ginger powder, salt, coriander, and crushed red pepper to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or overnight for best flavor.
  3. Preheat the grill or oven to medium-high heat. If using skewers, thread the marinated chicken onto skewers.
  4. Grill the chicken for about 6-8 minutes on each side or until cooked through and slightly charred. If baking, place on a baking sheet and bake for 25-30 minutes.
  5. Serve hot with peanut sauce on the side for dipping.

Notes

For extra flavor, soak wooden skewers in water for 30 minutes before using. Adjust the amount of crushed red pepper to suit your spice preference.
