  • 1 cup coconut milk
  • 0.25 cup soy sauce

  • 1 teaspoon turmeric
  • 2 cloves garlic
  • 1 tablespoon ginger
  • 1 tablespoon lime juice
  • 0.5 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 teaspoon red chili flakes or sriracha
  • 0.5 cup water

Instructions

  1. In a large bowl, mix the coconut milk, soy sauce, brown sugar, curry powder, turmeric, minced garlic, ginger, and lime juice to create the marinade.
  2. Add the chicken to the marinade, ensuring it is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium heat. Thread the marinated chicken onto skewers.
  4. Grill the skewers for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  5. Meanwhile, prepare the peanut sauce by whisking together the peanut butter, soy sauce, brown sugar, rice vinegar, red chili flakes, and water in a small saucepan over medium heat until smooth and heated through.

Notes

For a lighter version, substitute coconut milk with unsweetened almond milk. This recipe can be adapted for gluten-free diets by using tamari instead of soy sauce. Adjust spice levels in the peanut sauce according to your preference.
