Instructions
- In a large bowl, mix the coconut milk, soy sauce, brown sugar, curry powder, turmeric, minced garlic, ginger, and lime juice to create the marinade.
- Add the chicken to the marinade, ensuring it is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium heat. Thread the marinated chicken onto skewers.
- Grill the skewers for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- Meanwhile, prepare the peanut sauce by whisking together the peanut butter, soy sauce, brown sugar, rice vinegar, red chili flakes, and water in a small saucepan over medium heat until smooth and heated through.
