Ingredients

  • 2 cups diced cooked chicken rotisserie preferred
  • 1/2 cup sliced almonds
  • 1/3 cup dried cranberries or dried tart cherries
  • 1 cup finely diced apples Honeycrisp preferred
  • 1/3 cup thinly sliced green onions optional
  • Dressing: 1/3 cup mayo
  • 3 tablespoons sour cream light works great
  • 11/2 tablespoons honey
  • 11/2 tablespoons apple cider vinegar
  • 11/2 teaspoons Dijon-style mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. In a large bowl, combine the diced chicken, sliced almonds, dried cranberries or cherries, diced apples, and green onions if using.
  2. In a separate small bowl, whisk together the mayo, sour cream, honey, apple cider vinegar, Dijon mustard, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and toss until everything is well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
