- 2 cups diced cooked chicken rotisserie preferred
- 1/2 cup sliced almonds
- 1/3 cup dried cranberries or dried tart cherries
- 1 cup finely diced apples Honeycrisp preferred
- 1/3 cup thinly sliced green onions optional
- Dressing: 1/3 cup mayo
- 3 tablespoons sour cream light works great
- 1–1/2 tablespoons honey
- 1–1/2 tablespoons apple cider vinegar
- 1–1/2 teaspoons Dijon-style mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- In a large bowl, combine the diced chicken, sliced almonds, dried cranberries or cherries, diced apples, and green onions if using.
- In a separate small bowl, whisk together the mayo, sour cream, honey, apple cider vinegar, Dijon mustard, salt, and pepper until smooth.
- Pour the dressing over the chicken mixture and toss until everything is well coated.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
