2 cups diced peeled potatoes
1–3/4 cups sliced carrots
1 cup butter
cubed
2/3 cup chopped onion
1 cup all-purpose flour
1–3/4 teaspoons salt
1 teaspoon dried thyme
3/4 teaspoon pepper
3 cups chicken broth
1–1/2 cups whole milk
4 cups cubed cooked chicken
1 cup frozen peas
1 cup frozen corn
4 sheets refrigerated pie crust
Instructions
- Preheat your oven to 425 degrees F (220 degrees C).
- In a large saucepan, melt butter over medium heat. Stir in chopped onion and cook until translucent.
- Add flour, salt, thyme, and pepper. Stir until combined, then gradually whisk in chicken broth and milk. Cook until the mixture thickens.
- Add cooked chicken, potatoes, carrots, peas, and corn to the mixture. Stir well to combine.
- In a pie dish, lay down one sheet of pie crust, fill with chicken mixture, and cover with another sheet of pie crust. Seal edges and make small slits in the top crust.
- Bake in the preheated oven for 30 minutes, or until the crust is golden brown.
- Let cool for a few minutes before serving.
