- 2 tablespoons olive oil
- 1 lb boneless
- skinless chicken breasts
- 1 cup celery diced
- 1 cup carrot cut in 1/4 inch thick small circles
- 1 cup onion finely chopped
- 1/2 tablespoon garlic finely minced
- 2 cups yukon gold potatoes peeled+ cut into 1 inch pieces
- 1 cup yukon gold potatoes peeled+ cut into quarters
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon dried parsley
- 3 cups chicken broth or bone broth- low sodium!
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried rosemary
- 1 tablespoon fresh parsley for garnish
- 1/2 cup milk of choice
Instructions
- In a large pot, heat olive oil over medium heat. Add diced chicken breasts and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same pot, add celery, carrots, onion, and garlic. Sauté for about 5 minutes until the vegetables start to soften.
- Add the diced potatoes, black pepper, salt, parsley, chicken broth, basil, and rosemary to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
- Return the cooked chicken to the pot. Use an immersion blender if desired to blend some of the potatoes for a creamier texture, or leave it chunky.
- Stir in the milk of your choice and heat through. Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.

Feel free to use any vegetables you like or have on hand. This soup can be made gluten-free by ensuring your broth is gluten-free.
