- 4 chicken thighs or breasts
- ¼ cup grated parmesan cheese
- ½ cup panko breadcrumbs
- ¼ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon dried basil
- 2 cups marinara sauce
- 4 slices of mozzarella cheese
- 4 french rolls
Instructions
- Preheat your oven to 400 degrees F (200 degrees C).
- In a bowl, mix the panko breadcrumbs, grated parmesan cheese, paprika, salt, pepper, garlic powder, and dried basil.
- Coat the chicken thighs or breasts with the breadcrumb mixture, ensuring an even layer.
- Place the coated chicken on a baking sheet and bake for 20-25 minutes until golden and cooked through.
- In the last 5 minutes of baking, add a slice of mozzarella cheese on top of each chicken piece and return to the oven until melted.
- While the chicken is baking, heat the marinara sauce in a saucepan over medium heat.
- Once the chicken is ready, assemble the sandwiches by placing the chicken in the French rolls and topping with marinara sauce.
