- 1 tablespoon olive oil
- 20 g (1 tablespoon) unsalted butter
- 1 lb (450 g) chicken breast
- cut into 1-inch pieces
- 1 small onion
- finely diced
- 2 large garlic cloves
- finely chopped
- ¼ teaspoon red chili flakes
- 1 tablespoon Italian seasoning
- 1 ½ cup (300 ml) tomato sauce (passata)
- 1 cup half and half (single cream)
- ½ cup (50 g) Parmesan
- grated
- 2 tablespoons fresh parsley
- chopped
- Salt and freshly ground black pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil and butter over medium heat. Add the diced onion and sauté until translucent.
- Add the chopped garlic and red chili flakes, cooking for another minute until fragrant.
- Stir in the chicken pieces, Italian seasoning, salt, and pepper. Cook until the chicken is browned and cooked through.
- Pour in the tomato sauce and half and half, bringing the mixture to a gentle simmer.
- Mix in the cooked pasta and let it combine well with the sauce.
- Serve topped with grated Parmesan and freshly chopped parsley.
Notes
You can substitute chicken breast with cooked rotisserie chicken for a quicker version. Adjust chili flakes according to spice preference.
