- 2 large Open Nature® Air Chilled Skinless Boneless Chicken Breasts
- about 1.5 pounds
- Salt and freshly ground pepper

- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- plus more if needed
- 3 tablespoons butter
- divided
- 10 ounces Cremini mushrooms
- sliced
- 1 large Shallot
- finely chopped
- 3 cloves garlic
- minced
- 1 cup dry Marsala wine
- 1 cup O Organics® Chicken Broth
- 1/2 cup heavy cream
- 1/3 cup chopped parsley
Instructions
- Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
- In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat.
- Add the chicken breasts and cook until golden brown on both sides and cooked through, about 5-7 minutes per side. Remove and set aside.
- In the same skillet, add the remaining tablespoon of butter, then add the sliced mushrooms, shallot, and garlic. Sauté until the mushrooms are browned and tender.
- Pour in the Marsala wine, scraping the skillet to deglaze, and allow it to reduce for about 2-3 minutes.
- Stir in the chicken broth and heavy cream, bringing to a gentle simmer.
- Return the chicken to the skillet, cooking for another 5 minutes in the sauce.
- Garnish with chopped parsley before serving.
Notes
For a richer flavor, consider using homemade chicken broth. Ensure the sauce simmers gently to avoid curdling the cream.
