  • about 1.5 pounds
  • Salt and freshly ground pepper
  • to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • plus more if needed
  • 3 tablespoons butter
  • divided
  • 10 ounces Cremini mushrooms
  • sliced
  • 1 large Shallot
  • finely chopped
  • 3 cloves garlic
  • minced
  • 1 cup dry Marsala wine
  • 1 cup O Organics® Chicken Broth
  • 1/2 cup heavy cream
  • 1/3 cup chopped parsley

Instructions

  1. Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
  2. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat.
  3. Add the chicken breasts and cook until golden brown on both sides and cooked through, about 5-7 minutes per side. Remove and set aside.
  4. In the same skillet, add the remaining tablespoon of butter, then add the sliced mushrooms, shallot, and garlic. Sauté until the mushrooms are browned and tender.
  5. Pour in the Marsala wine, scraping the skillet to deglaze, and allow it to reduce for about 2-3 minutes.
  6. Stir in the chicken broth and heavy cream, bringing to a gentle simmer.
  7. Return the chicken to the skillet, cooking for another 5 minutes in the sauce.
  8. Garnish with chopped parsley before serving.

Notes

For a richer flavor, consider using homemade chicken broth. Ensure the sauce simmers gently to avoid curdling the cream.
