68 thin sliced chicken breasts

2 cups flour

2 tsp baking powder

1 tsp baking soda

1 tsp salt

1 tsp pepper

1 tsp garlic powder

1 1/2 cup buttermilk

1 egg

1 Tbs hot sauce

Oil for frying

1/4 cup reserved oil from frying

1/3 cup flour

2 cup milk

Salt & pepper


Instructions

  • In a large bowl, mix together flour, baking powder, baking soda, salt, pepper, and garlic powder.
  • In another bowl, whisk together buttermilk, egg, and hot sauce.
  • Dredge each chicken breast in the flour mixture, then dip in the buttermilk mixture, and finally coat with the flour mixture again for a double-crust finish.
  • Heat oil in a large skillet over medium-high heat, enough to submerge the chicken pieces.
  • Fry the chicken in batches until golden brown and cooked through, about 4-5 minutes per side. Transfers to a paper towel-lined plate to drain.
  • For the gravy, use 1/4 cup of the reserved oil from frying, whisk in 1/3 cup of flour over medium heat until golden.
  • Gradually pour in 2 cups of milk, whisking constantly until thickened. Season with salt and pepper to taste.
  • Serve the Chicken Fried Chicken hot with gravy drizzled on top.

Notes

Make sure the oil is hot before adding chicken to achieve a crispy texture. Adjust the amount of hot sauce in the buttermilk according to your spice preference.
