- 1.5 lbs Chicken breast
- 1 cup Jasmine rice
- 1 cup Enchilada sauce
- 2 cups Chicken broth
- 1/2 cup Cheddar cheese
- 1 14.5oz can Black beans
- 1 cup Corn
- 1/2 cup Diced tomatoes
- 1/4 cup Diced green onion
- 1/4 cup Chopped fresh cilantro
- 1 Lime
- 1 tsp Sea salt
Instructions
- Preheat your oven to 375°F (190°C).
- In a pot, combine Jasmine rice and 2 cups of chicken broth. Bring to a boil, then reduce heat, cover, and simmer until tender.
- While the rice is cooking, season chicken breasts with salt and bake in the preheated oven for 25-30 minutes, or until fully cooked.
- Shred the cooked chicken and mix it with the enchilada sauce.
- In a bowl, combine black beans, corn, diced tomatoes, green onion, cilantro, lime juice, and sea salt to make the salsa.
- Assemble the meal prep bowls by layering rice, shredded chicken with enchilada sauce, and topping with cheddar cheese and black bean corn salsa.
- Store in airtight containers in the fridge for up to 5 days.
