- 2 boneless skinless chicken breasts

- 4 cups chopped romaine lettuce
- 1½ cups cherry tomatoes halved
- 1 cup garlic croutons
- ¾ cup shaved Parmesan cheese
- Chopped fresh parsley for garnish (optional)
- ¾ cup Caesar dressing
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon Dijon mustard
- Freshly ground black pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and set aside to cool.
- In a skillet, heat olive oil over medium heat. Season chicken breasts with garlic powder, Italian seasoning, salt, and pepper. Cook chicken until golden and cooked through, about 6-7 minutes per side. Let it rest, then slice.
- In a large bowl, combine cooled pasta, chopped romaine, cherry tomatoes, garlic croutons, sliced chicken, and shaved Parmesan cheese.
- In a separate bowl, whisk together Caesar dressing, mayonnaise, lemon juice, grated Parmesan, Dijon mustard, and black pepper.
- Pour dressing over salad and toss gently to combine. Garnish with chopped parsley, if desired.
Notes
You can substitute grilled chicken with rotisserie chicken for a quicker option. Adjust the dressing quantities to suit your taste.
