- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 avocado sliced
- 4 slices of your favorite cheese Swiss
- cheddar
- or provolone work well
- 4 slices of bread sourdough
- ciabatta
- or your choice
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion thinly sliced
- 1 tomato sliced
- Butter or olive oil for grilling the sandwiches
Instructions
- Season chicken breasts with salt and pepper on both sides.
- In a skillet, heat olive oil over medium heat and cook the chicken breasts for 7-8 minutes on each side until fully cooked.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- In a small bowl, mix mayonnaise and Dijon mustard.
- Spread the mayonnaise mixture on one side of each slice of bread.
- Layer the sliced chicken, avocado, cheese, red onion, and tomato on half of the bread slices, then top with the remaining slices.
- Heat butter or olive oil in a skillet over medium heat, then grill the sandwiches until golden brown and the cheese is melted, about 3-4 minutes per side.
- Slice in half and serve warm.
Notes
For an extra crunch, consider adding some fresh greens like spinach or arugula.
