- 12 oz chicken apple sausage
- sliced
- 8 oz short pasta (penne or rotini)
- 2 tbsp olive oil
- 1 medium yellow onion
- diced
- 1 large bell pepper
- diced
- 3 cloves garlic
- minced
- 3 cups low-sodium chicken broth
- 3 cups baby spinach
- 1/2 cup grated parmesan cheese
- plus more for serving
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until softened.
- Stir in the sliced chicken apple sausage and minced garlic. Cook for another 2-3 minutes until the sausage is heated through.
- Add the chicken broth and bring to a boil. Once boiling, add the short pasta and cook according to package instructions until al dente, stirring occasionally.
- When the pasta is cooked, stir in the baby spinach and grated parmesan cheese. Season with salt and black pepper, and cook until the spinach has wilted.
- Serve warm, topped with additional parmesan cheese if desired.
Notes
Feel free to customize the vegetables based on what you have on hand. This recipe can also be made with gluten-free pasta if needed.
