- 1 pound Boneless Chicken Breasts or Thighs
- 2 Medium Sweet Potato peeled and diced
- 2 tablespoon Olive Oil
- 1 Small Red Onion
- 2 Garlic Cloves minced
- 1 tsp Smoked Paprika
- ½ tsp Cumin
- Salt and Pepper to taste
- Chili Flakes Optional
- Squeeze of Lemon Juice Optional
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the diced sweet potatoes, olive oil, minced garlic, onion, smoked paprika, cumin, salt, and pepper. Toss until sweet potatoes are well coated.
- Place the chicken breasts or thighs in a separate bowl and season with salt, pepper, and chili flakes (if using). Pour a little olive oil over the chicken and rub to coat.
- Spread the sweet potato mixture onto a baking sheet. Place the chicken on top of the sweet potatoes. Optional: Squeeze lemon juice over the chicken.
- Bake in the preheated oven for about 30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
- Remove from oven and let it rest for a few minutes before serving.
Notes
For added flavor, feel free to marinate the chicken in the seasoning for a few hours before cooking. Adjust the spice level by adding more or fewer chili flakes.
