- 1 box chicken-flavored Stove Top stuffing mix 6-ounce box
- 1 ½ lbs boneless
- skinless chicken breasts diced
- 1 can condensed cream of chicken soup
- ⅓ cup sour cream
- 16 oz frozen mixed vegetables
- salt/pepper to taste
- 4–5 garlic cloves minced
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the diced chicken, cream of chicken soup, sour cream, mixed vegetables, minced garlic, salt, and pepper. Mix until well combined.
- In a baking dish, layer the chicken mixture evenly.
- Prepare the Stove Top stuffing according to package instructions and spread it over the chicken mixture.
- Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 5-10 minutes until the stuffing is golden brown.
- Let it cool slightly before serving. Enjoy!
Notes
For extra flavor, you can add some herbs like thyme or parsley to the chicken mixture. This casserole is also great for meal prep and can be stored in the refrigerator for up to 3 days.
