  • 3 cups (450g) Basmati rice
  • 3 cups (450g) Chicken breast
  • 1 cup (150g) Carrots
  • 1 cup (150g) Green peas
  • 1.5 cups (170g) Mozzarella cheese
  • 1.5 cups (170g) Sharp cheddar cheese
  • 4 tbsp (60g) Butter
  • 1/4 cup (30g) All-purpose flour
  • 2 cups (480ml) Heavy cream
  • 1/4 cup (10g) Fresh parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the steamed Basmati rice, cooked and shredded chicken, diced carrots, and green peas.
  3. In a saucepan, melt the butter over medium heat. Stir in the all-purpose flour and cook for about 1 minute, stirring continuously.
  4. Gradually whisk in the heavy cream, and bring to a simmer. Cook until slightly thickened, about 5 minutes.
  5. Remove from heat and stir in both the mozzarella and sharp cheddar cheeses until melted and smooth.
  6. Pour the cheese sauce over the rice and chicken mixture, and mix until everything is well combined.
  7. Transfer the mixture to a greased baking dish and top with additional shredded cheddar cheese if desired.
  8. Bake in the preheated oven for 25-30 minutes, until the casserole is bubbly and golden on top.
  9. Garnish with finely chopped fresh parsley before serving.

Notes

For added flavor, consider using cooked garlic or onion in the cheese sauce. You can also substitute other vegetables based on your preference.
