  • 1 tablespoon Italian seasoning

  • 3 tablespoons unsalted butter

  • 3 cups baby spinach
  • roughly chopped
  • 16 ounces baby Dutch potatoes
  • halved
  • 2 tablespoons chopped fresh parsley leaves
  • ¼ cup unsalted butter
  • 4 cloves garlic
  • minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • or more
  • as needed
  • 1 teaspoon dried thyme
  • ½ teaspoon dried basil
  • ½ cup half and half
  • ½ cup freshly grated Parmesan
  • Kosher salt and freshly ground black pepper
  • to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs with Italian seasoning, salt, and pepper.
  3. In a large oven-safe skillet, melt 1 tablespoon of butter over medium-high heat and brown the chicken thighs skin-side down for about 5-7 minutes.
  4. Flip the chicken thighs and add the baby Dutch potatoes to the skillet. Cook for another 5 minutes.
  5. Transfer the skillet to the preheated oven and bake for 25 minutes.
  6. Meanwhile, in a saucepan, melt ¼ cup of butter over medium heat, add the minced garlic, and sauté until fragrant.
  7. Stir in the flour and cook for 1 minute, then gradually whisk in the chicken broth.
  8. Add thyme, basil, half and half, and Parmesan, season with salt and pepper, and cook until the sauce thickens.
  9. Once chicken is cooked, remove from the oven and stir in the baby spinach until wilted.
  10. Serve the chicken and potatoes topped with the garlic Parmesan cream sauce and garnished with fresh parsley.

Notes

For extra flavor, let the chicken marinate for a few hours before cooking. Adjust the consistency of the sauce with more chicken broth if desired.
