- skin-on chicken thighs

- 1 tablespoon Italian seasoning

- 3 cups baby spinach

- 16 ounces baby Dutch potatoes
- halved
- 2 tablespoons chopped fresh parsley leaves
- ¼ cup unsalted butter
- 4 cloves garlic
- minced
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- or more
- as needed
- 1 teaspoon dried thyme
- ½ teaspoon dried basil
- ½ cup half and half
- ½ cup freshly grated Parmesan
- Kosher salt and freshly ground black pepper

Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken thighs with Italian seasoning, salt, and pepper.
- In a large oven-safe skillet, melt 1 tablespoon of butter over medium-high heat and brown the chicken thighs skin-side down for about 5-7 minutes.
- Flip the chicken thighs and add the baby Dutch potatoes to the skillet. Cook for another 5 minutes.
- Transfer the skillet to the preheated oven and bake for 25 minutes.
- Meanwhile, in a saucepan, melt ¼ cup of butter over medium heat, add the minced garlic, and sauté until fragrant.
- Stir in the flour and cook for 1 minute, then gradually whisk in the chicken broth.
- Add thyme, basil, half and half, and Parmesan, season with salt and pepper, and cook until the sauce thickens.
- Once chicken is cooked, remove from the oven and stir in the baby spinach until wilted.
- Serve the chicken and potatoes topped with the garlic Parmesan cream sauce and garnished with fresh parsley.
Notes
For extra flavor, let the chicken marinate for a few hours before cooking. Adjust the consistency of the sauce with more chicken broth if desired.
