Ingredients

  • 2/3 cup Libby’s Pumpkin Puree

  • 1/2 cup granulated sugar
  • 1/2 cup + 2 tablespoons dark brown sugar

  • 2 teaspoons vanilla extract
  • 1 2/3 cup + 1 tablespoon all-purpose flour
  • 1 1/2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon fine sea salt
  • 1/3 cup granulated sugar
  • for rolling
  • 1 teaspoon ground cinnamon
  • for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the unsalted butter, pumpkin puree, granulated sugar, and dark brown sugar until smooth and fluffy.
  3. Add in the egg yolks and vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, pumpkin spice, baking soda, cream of tartar, and sea salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. In a small bowl, combine the granulated sugar and ground cinnamon for rolling.
  7. Scoop out dough and roll them into balls, then roll each ball in the cinnamon-sugar mixture.
  8. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, measure flour correctly by spooning it into a measuring cup and leveling it off with a knife. These cookies can be stored in an airtight container for up to a week.
