Description
This Cherry Vanilla Jam brings out the sweet essence of ripe cherries combined with the warm notes of vanilla, making it a delightful spread for toasts, pastries, and more.
Ingredients

5 Cups Sweet
dark cherries* about 2.5 lbs
2 1/2 cups white sugar
3 Tbs lemon juice
1 vanilla bean
split and seeds scraped or 3 tsp extract
1 packet low-sugar pectin* 49 g
or a shallow 1/3 cup
Instructions
- In a large pot, combine the cherries, lemon juice, and split vanilla bean with scraped seeds. Stir in the sugar and let the mixture sit for about 30 minutes to macerate.
- After the cherries have macerated, add the low-sugar pectin and bring the mixture to a vigorous boil, stirring constantly.
- Continue to boil for about 5-10 minutes, or until the jam reaches the desired consistency. Test it on a chilled plate to check if it sets.
- Remove the pot from the heat and skim off any foam. Pour the jam into sterilized jars while hot, seal, and let cool.
Notes
Ensure that the jars are properly sterilized before filling to maximize shelf life. This jam can be preserved for several months if sealed correctly.
