Ingredients

  • 200 grams (7 ounces) linguini pasta
  • 650 grams (1.7 pounds) cherry tomatoes
  • 5 tablespoons extra virgin olive oil
  • 45 small sprigs of thyme
  • 40 grams (½ small) onion minced
  • 5 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1012 fresh basil leaves if too large
  • cut them in half
  • sea salt
  • freshly ground pepper

Instructions

  1. Cook the linguini pasta according to package instructions until al dente.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced onion and sauté until translucent.
  3. Add the minced garlic and thyme sprigs to the skillet and cook for an additional minute until fragrant.
  4. Stir in the cherry tomatoes and dried oregano. Cook until the tomatoes burst and release their juices, about 8-10 minutes.
  5. Once the pasta is ready, drain it and add it to the skillet with the tomato mixture. Toss to combine.
  6. Season with sea salt and freshly ground pepper to taste. Add fresh basil leaves and mix gently.
  7. Serve immediately while hot.

Notes

Feel free to substitute other pasta types and add grated Parmesan if desired.
