Deliciously moist Cherry Muffins bursting with fresh flavors, perfect for breakfast or an afternoon snack.
Ingredients

2 cups (240 g) all purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup (113 g) unsalted butter melted
1 cup (200 g) sugar
2 large eggs room temperature
1 teaspoon vanilla extract
½ cup (120 g) sour cream room temperature
½ cup (120 ml) milk room temperature
2 cups fresh or frozen cherries pitted and chopped
¼ cup (50 g) coarse sugar for topping optional
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, mix the melted butter and sugar until combined, then add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, sour cream, and milk until smooth.
- Gradually add the dry ingredients to the wet mixture and mix until just combined, then fold in the chopped cherries.
- Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full. Sprinkle with coarse sugar if desired.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, use room temperature ingredients and make sure the cherries are pitted and chopped evenly.
