Cherry Clafoutis is a classic French dessert that combines the sweetness of cherries with a flan-like batter, creating a delightful and simple dish that is perfect for any occasion.
Ingredients
1 1/2 cups Fresh sweet cherries*
pitted (or use canned cherries
drained–about 1 can)
3 large eggs
room temperature
1/2 cup all-purpose flour
1/2 cup granulated sugar
plus 2 Tablespoons for topping
1 cup whole milk
or half and half
1 1/2 teaspoons vanilla extract
1/2 teaspoon almond extract
1/4 teaspoon salt
powdered sugar
for dusting on top
Instructions
- Preheat your oven to 375°F (190°C) and grease a pie dish or baking dish.
- In a mixing bowl, whisk together the eggs and granulated sugar until well combined.
- Add the flour, salt, vanilla extract, almond extract, and milk. Mix until smooth.
- Spread the pitted cherries evenly in the prepared baking dish.
- Pour the batter gently over the cherries.
- Sprinkle the additional 2 tablespoons of sugar on top.
- Bake for 30-35 minutes or until the clafoutis is set and lightly golden.
- Allow to cool slightly before dusting with powdered sugar and serving.
Notes
For the best flavor, use fresh sweet cherries when in season. Serve warm or at room temperature.
