Chef John’s Peanut Curry Chicken is a hearty, flavorful dish combining tender chicken thighs with a rich peanut curry sauce. This dish is packed with spices and vegetables, making it a perfect meal for family gatherings or a cozy night in.

- 2 teaspoons ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper
- 2 ½ pounds skinless
- boneless chicken thighs
- cut into 2-inch pieces
- 2 tablespoons vegetable oil
- 1 large yellow onion
- chopped
- 6 cloves garlic
- minced
- 1 tablespoon finely grated fresh ginger
- 3 ½ cups chicken broth
- or to taste
- ¾ cup unsweetened natural peanut butter
- ½ cup ketchup
- 1 tablespoon packed brown sugar
- 1 pound zucchini
- cut into chunks
- 1 medium red bell pepper
- cut into chunks
- 1 medium green poblano pepper
- diced
- ½ cup roasted peanuts
- plus more for garnish
- 2 cups hot cooked rice
- 1 medium lime
- cut into wedges
- 3 tablespoons chopped fresh cilantro
- for garnish
Instructions
- In a small bowl, mix together the kosher salt, ground coriander, ground cumin, ground turmeric, paprika, and cayenne pepper to create the spice blend.
- In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Add the minced garlic and grated ginger, cooking for another minute until fragrant.
- Stir in the spice blend and cook for an additional minute.
- Add the chicken pieces to the pot, stirring to coat with the spices, and cook until browned on all sides, about 5-7 minutes.
- Pour in the chicken broth, then add the peanut butter, ketchup, and brown sugar. Mix well until combined.
- Add the zucchini, red bell pepper, poblano pepper, and roasted peanuts. Stir to incorporate and bring to a simmer.
- Reduce heat to low and cover the pot. Let simmer for 25-30 minutes until the chicken is cooked through and the vegetables are tender.
- Serve over hot cooked rice, garnished with lime wedges and chopped cilantro, with extra roasted peanuts on top.
Notes
Adjust the spiciness by modifying the cayenne pepper to taste. This dish pairs excellently with jasmine or basmati rice.
