These Cheesy Zucchini Breadsticks are a delicious and healthy alternative to traditional breadsticks, packed with flavor and perfect for snacking or serving as an appetizer.
Ingredients
- Fresh medium zucchinis
- large eggs
- shredded low-moisture mozzarella
- freshly grated Parmesan cheese
- garlic powder
- Italian seasoning
- salt
- pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Finely shred the zucchinis and place them in a clean kitchen towel or cheesecloth. Squeeze out excess moisture until the zucchinis are dry.
- In a large mixing bowl, combine the dried zucchini, eggs, shredded mozzarella, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Spread the zucchini mixture evenly onto the prepared baking sheet to form a rectangular shape, about 1/2 inch thick.
- Bake in the preheated oven for 25-30 minutes or until the edges are golden and the center is set.
- Remove from the oven, allow to cool slightly, then cut into breadstick shapes. Serve warm or at room temperature.
Notes
For extra flavor, consider adding crushed red pepper flakes or fresh herbs to the mixture. They can also be served with marinara sauce for dipping.
