This Cheesy Taco Rice Skillet is a quick and flavorful one-pan meal that combines ground beef, beans, corn, and spices, all topped with gooey cheese.

- 1 lb lean ground beef
- ½ medium onion diced
- 3 tbsp taco seasoning
- ½ cup prepared salsa
- 15 oz can black beans drained and rinsed
- 15 oz can sweet corn
- 10 oz can diced tomatoes and green chiles
- 8.5 oz bag Ready Rice
- 4 oz Colby Jack cheese shredded from the block
- optional garnishes: fresh cilantro

Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the diced onion to the skillet and cook until softened, about 3-4 minutes.
- Stir in taco seasoning, prepared salsa, black beans, sweet corn, and diced tomatoes with green chiles. Cook for an additional 5 minutes.
- Add the microwaved Ready Rice to the skillet and mix until well combined.
- Sprinkle shredded Colby Jack cheese over the top and cover the skillet until the cheese is melted, about 3-5 minutes.
- Serve hot with optional garnishes such as fresh cilantro, avocado, sour cream, or crushed tortilla chips.
Notes
For a vegetarian version, substitute ground beef with plant-based meat or additional beans. Feel free to adjust the spice level by using different taco seasonings.
