- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 ½ cups white long grain rice rinsed
- 2 cups chicken stock
- 2 cups water
- 3 cups broccoli florets roughly chopped
- ½ cup milk
- 2 cups sharp cheddar cheese shredded divided
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, sauté the chopped onion and minced garlic until translucent.
- Add the cubed chicken, cooking until lightly browned.
- Stir in the rinsed rice, chicken stock, and water, bringing to a simmer.
- Mix in the chopped broccoli and half of the shredded cheese.
- Pour the mixture into a casserole dish, and pour the milk evenly over the top.
- Sprinkle the remaining cheese on top.
- Bake for 30 minutes or until the casserole is bubbly and golden.
