  • 1 pound chicken breasts cut into 1×1-inch cubes
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 ½ cups white long grain rice rinsed
  • 2 cups chicken stock
  • 2 cups water
  • 3 cups broccoli florets roughly chopped
  • ½ cup milk
  • 2 cups sharp cheddar cheese shredded divided

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, sauté the chopped onion and minced garlic until translucent.
  3. Add the cubed chicken, cooking until lightly browned.
  4. Stir in the rinsed rice, chicken stock, and water, bringing to a simmer.
  5. Mix in the chopped broccoli and half of the shredded cheese.
  6. Pour the mixture into a casserole dish, and pour the milk evenly over the top.
